Wild Rice Arctic Granny Apple, Chicken Salad

Ingredients

  • 35oz | 1000g Cooked and chilled wild rice
  • 17-1/2oz | 500g Arctic® Granny, 1/2-inch dice
  • 32oz | 900g Chicken breast, seasoned, cooked, cut into large dice
  • 7oz | 200g Celery, diced
  • 6oz | 170g Red onion, small dice
  • 1/3oz | 10g Parsley, minced
  • 6oz | 170g Lemon juice
  • 5-1/2oz | 160g Vegetable oil, winterized
  • 9oz | 260g/ml Orange juice
  • 3oz | 90g Dijon mustard
  • 1oz | 30g Sugar
  • 3/4oz | 20g Salt
  • 2 teaspoons |10 ml Black pepper, ground
  • 2oz | 57g Pecan pieces, roasted*

Directions

  • Mix together wild rice, Arctic Granny dice, chicken, celery, red onion, and parsley. Set aside.
  • In another bowl, whisk together lemon juice, vegetable oil, orange juice, mustard, sugar, salt and black pepper until well-combined.
  • Combine the dressing with the main ingredients in the other bowl. Stir so that all the ingredients are well coated with the dressing. Refrigerate until needed. (It will taste better after a few hours in the refrigerator.)
  • Top with roasted pecan pieces just before serving.
  • *To roast pecan pieces, spread the pecan pieces evenly on a sheet tray. Place in a 350˚ F oven and roast 10-15 minutes or until the pecans are fragrant and toasted.
