Roasted Carrots, Onions and Apples


  • 1 lb. tricolor carrots, halved lengthwise
  • 1 red onions, cut in 1 inch pieces
  • 1 bag of Arctic® Granny sliced apples
  • Fresh thyme
  • Salt + pepper
  • Olive oil
  • Juice of 1 lemon
  • 1 tbsp. maple syrup
  • Fresh thyme


  • Preheat the oven to 400 degrees. Spread carrots, onions, Arctic® apple slices, and fresh time sprigs in an even layer on a baking sheet. Season with salt, pepper, and drizzle with olive oil. Roast for 30-40 minutes, tossing halfway through. The last 10 minutes of cooking, drizzle maple syrup over and put back in the oven to caramelize a bit. Finish with a squeeze of lemon juice right when they come out of the oven. Garnish with chopped fresh thyme and serve.
