Dessert Nachos with Sweet Arctic Apple Salsa
May is Salsa Month, and we couldn’t be more excited! Arctic® apples are a perfect fit for a fruit salsa since you don’t need to worry about unappetizing browning showing up to the party. Our newest recipe is an unexpected sweet treat for those who love chips and salsa!
Ingredients
- For Apple Dessert Salsa:
- 10 oz sliced Arctic® Golden apples
- ½ cup fresh cranberries (can substitute strawberries and eliminate honey if fresh cranberries unavailable)
- 2 teaspoons finely chopped fresh mint
- Grated zest from one lime
- 1 tablespoon honey
- For Cinnamon Pita Chips:
- 10 4-inch corn tortillas
- 3 tablespoons sugar
- 1 tablespoon cinnamon
- Canola oil spray
- For Nachos:
- Cinnamon Pita Chips
- Apple Dessert Salsa
- ¼ cup vanilla low-fat yogurt
- ¼ cup shredded cheddar cheese (optional)
Directions
- Chop apple slices and cranberries to a fine dice. Combine with mint, lime zest and honey. Set salsa aside.
- Heat oven to 400 degrees. Lightly spray two baking sheets with canola spray. Stack tortillas on a cutting board 5 at a time and cut stacks in half with a large kitchen knife. Continue to cut each half-stack into thirds so you end up with 60 chips.
- Place cut tortillas in a single layer on baking sheets. Spray with canola oil. Combine sugar and cinnamon and sprinkle over chips. Bake until golden and crisp, about ten minutes.
- To assemble nachos, fan chips out on a circular platter. Distribute apple salsa throughout and place a dollop of vanilla yogurt in center to mimic traditional sour cream. Sprinkle with cheddar cheese, if using, for those who appreciate a similar treatment on their apple pie.
- Serve, and enjoy!
