Breakfast is one of the most versatile meals of the day. Think of your favorite food and there’s a good chance it can be added to or substituted for breakfast. Almost any food can be used to break one’s fast and breakfast can be enjoyed any time. Raise your hand if you’ve had breakfast for dinner. We thought so.

One of the best parts of recipe development is finding ways to keep recipes flexible so they can be meal plan chameleons. Who wants a one-trick pony? Actually, we love ponies. And we love making things easier in the kitchen so we can enjoy more time with the people we love. So while our latest recipe seems breakfast focused it can also easily pinch hit for lunch or dinner. Tested in-house, of course.

Say hello to the Arctic® Apple Ham and Cheese Skillet Pancake. This apple-centric delight is part deep-dish pancake, a little bit quiche-y, and all delicious. It’s perfect as breakfast before hitting the slopes, can be enjoyed with a leisurely brunch (mimosa optional), pulls its weight for a midday meal (just add salad), and makes a brilliant weekday dinner side dish or potluck contribution. Late night buffet? Bring it on.

Ingredients

  • 4 large eggs
  • ¾ cup flour
  • ¾ cup whole milk
  • ½ teaspoon coarse salt, divided
  • ¼ teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter
  • 1 bag of Arctic® Granny sliced apples (2 or more apples)
  • 1 tablespoon brown sugar
  • ½ cup chopped ham
  • 2 oz. grated gruyere (about ½ cup, packed)
  • 2 tablespoons chopped chives

Directions

  • Heat oven to 425F. In a large bowl, whisk together the eggs and flour. Whisk in the milk, salt, and pepper. Set aside at room temperature for 15 minutes. Whisk again to break up any lumps. Alternately, combine all ingredients in a blender and blend on high 1 minute.
  • Melt the butter in a heavy 9 or 10-inch skillet. Add Arctic® Granny apples and sugar and cook, stirring frequently, until browned and sort, about 6-7 minutes. Stir in the ham and cook 2 minutes longer. Pour batter over the mixture and scatter the cheese on top. Bake 15-20 minutes or until browned and puffed. Serve sprinkled with the chives.
