Arctic Apple Ginger Muffins
Crisp mornings and cool evenings have us reaching for thick sweaters and comfort food. Autumn is a perfect time to reinvigorate your favorite baking recipes by adding a fun new twist. And that’s what we did with these ginger-apple muffins.
We love playing with a tried-and-true recipe, so when it came to muffins we wanted to elevate the standard with familiar flavors and a dash of the unexpected. Ginger and apples? A perfect match for our culinary trials. (no slight meant to the classic carrot – your turn may come)

Ingredients
- Ingredients (topping)
- ½ cup all-purpose flour
- ⅓ cup granulated sugar
- ¼ cup coarsely chopped Arctic ApBitz™ dried apple snacks
- 2 tablespoons finely chopped candied ginger
- 1 stick butter, melted
- Ingredients (muffins)
- 1 ¼ cups whole wheat flour
- 1 ¼ cups all-purpose flour
- 2 teaspoons baking powder
- 1 ½ teaspoons dried ginger
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup packed light brown sugar
- 2 large eggs
- 1 cup yogurt
- ½ cup milk
- 2 teaspoons vanilla extract
- 2 Arctic® apples, peeled, cored and chopped
Directions
- Preheat the oven to 400F. Grease and flour a large 12-cup muffin tin or line with paper liners.
- In a medium bowl, combine flour, sugar, Arctic ApBitz™ dried apple snacks and candied ginger. Stir in 2 tablespoons of the melted butter with the remaining reserved for the muffin base. Squeeze the crumbs together with your fingers until larger crumbs form. Set aside.
- In a large bowl, whisk together the flour, baking powder, ginger, baking soda, and salt. In another bowl combine the sugar, eggs, yogurt, milk, and remaining melted butter from the topping. Mix the dry ingredients into the wet and fold in the Arctic® apples. Divide between muffin tins and sprinkle with the topping, pressing lightly, and bake 21-25 minutes or until a toothpick inserted comes out clean.
- When they’re done remove the muffins to a cooling rack for 5 minutes, then take out of the pans to finish cooling completely.
