Arctic® Apples Golden Goddess Slaw

Most Americans are not meeting the fruit and vegetable guidelines. Coleslaw is a versatile side that can help boost fruit and veggie intake and is so easy to add to summer classics like sandwiches, hamburgers and tacos. We partnered up with Registered Dietitian Amber Pankonin of the Stirlist to create a delicious Arctic® Apples Golden Goddess Slaw!
“With the start of summer right around the corner, I wanted to kick things off right by celebrating with a special recipe I know I’ll be sharing with friends and family this summer. In my opinion, nothing says summertime food like coleslaw. I grew up eating coleslaw in the summer as a side dish served with baked beans and ribs. However, as an adult and Registered Dietitian, I’ve grown to really appreciate the versatility of coleslaw for several reasons:

  1. You can use coleslaw to enhance the flavor of so many great summer classics like pulled pork sandwiches, hamburgers, hot dogs and tacos!
  2. It’s incredibly filling because it’s loaded with fiber. When served on a sandwich or taco, this helps keep me fuller longer and I don’t have to stuff my face with 3 more tacos. =)
  3. It’s a great way to increase fruit and vegetable intake. Most Americans are not meeting the fruit and vegetable guidelines which is at least 3 (1/2) cup servings each day. Adding coleslaw to your favorite summer foods is a great way to boost fruit and veggie intake!”

DIRECTIONS

  1. Combine apples, carrots and red cabbage. Set aside.
  2. In a mason jar, combine canola oil, lemon zest, lemon juice, shallots, Dijon mustard, honey and salt.
  3. Secure lid and shake well.
  4. Remove lid and pour over slaw mixture.
  5. Mix and serve.

Ingredients

  • 4 cups Arctic® Golden apples slices, sliced in thin strips
  • 2 cups shredded carrots
  • 2 cups shredded red cabbage
  • 1/3 cup canola oil
  • 1 tsp Lemon zest
  • Juice of 1 lemon
  • 1 TB minced shallots
  • 1 TB Dijon Mustard
  • 1 TB Honey
  • ¼ tsp salt
